We can go to him for improving our Congee.
I just had a bowl of congee for breakfast - a sumptuous way to start my day. :)

Oh wow, you are very welcome, Zainul...I eat a lot of Asian food and congee, as you knos is big ther.. read moreOh wow, you are very welcome, Zainul...I eat a lot of Asian food and congee, as you knos is big there...and there is many variations...which brings me to childhood song...'it's a small world after all, it's a small world after all lol...anyhoo, I cook Arroz Caldo which lay loosely translate to hot rice...I boil my choice of chicken meat, for me a mix of chicken breast and thigh meat(cut in cubes), you get both white and dark, I boil that for...hmm 20 min or so, check if it's tender by fork...add fresh cut ginger, sweet rice(a short grain but you can use white or brown rice), chicken bouillon cubes, about two...fish sauce...it should be this lively yellowish color...then you top it with slice hard boiled egg...minced scallion...also, crushed chicharon which I'll use fried chicken skin(this is optional...a dash of pepper for kick...voila, instant comfort food, doesn't take much ingredients and inexpensive. Just thinking of the ginger taste...mmmm :)
So yes, your writing struck a chord in my heart...I do like the Chinese version with corn and stirred egg...so many variations...I'll try them all, in my to do list. :)

It's probably the best choice I've made...no more acid reflux and heartburn...muscle recovery is fast after a workout when your diet is more protein based. White meat, and less red meat. I had to learn the hard way. Yet I also think food being GMO(genitically modified) has caused food allergies in the worse way. And meat sources are shot up with hormones. Congee is a simple dish that has been around since ancient time for medicinal purpose.

I find it interesting that most cultures in the world have some kind of fermented foods that are good for ailments.. The only one in western culture that I have heard of is sauerkraut (there could be more) and it is of German origins. I've eaten sauerkraut for indigestion and kimchee for colds and the flu.. and I very much would like to try Congee. Your poem was delightful and therapeutic!

I have never heard of Congee. My mom used to make a delicious porridge called, 'Cream of Wheat.' They even have a chocolate version called, 'Cocoa Wheats!' Ahh, that stuff was so good on snowy mornings. I need to go shopping! I love learning about new things. Thank you for sharing this, Zainul. Angi~
