So you want to be a Chef

This job 
is insanity at it's finest 
long hours 
incredible heat 
deafening noise and constant struggle 
to make a symphony 
out of chaos 
it is the closest thing 
to heaven 
or hell 
that you will 
ever get in a job 
you need passion and desire 
to do this work 
and you need to be 
a little sadistic 
sacrificing so much 
for the art 
for the food 
it is not a job for the squeamish 
or the lazy 
some people will 
call you 
an egomaniac 
and that is okay 
because it takes 
an undeniable confidence 
and perseverance 
to do this day after day 
while missing out 
on everything 
from birthdays 
to holidays and anniversary's 
knowing that there is 
always 
something more 
to learn 
to be better at 
to strive for 
and if that fire 
in your belly 
ever fades 
it is time 
to hang it up
