In Egypt for example, the ornamental designs both carved into planar,(flat), stones; and the rounded edges on things like statue, those big rock coffins, and temples.
The material is the some of the very hardest stone on Earth. Harder than God's head. They say these things were done by hand, but we're talking about using machines and tooling to shape stone, make no doubt about it. In order for a piece of wood to have an edge squared and radius, (rounded) one must use a machine. You cannot make perfect pieces of crown moulding, for example, with two flat rocks, some ashes, and your fisties. The machinery used in remanufacturing of wood is complex and can produce the same thing over and over. Hands cant do that. So, to tool the hardest stone on the planet, so as to stack them,(forgetting that many weigh 50, 100 ton and more) is a task that would require not only machines to quarry the stone and plane it it preparation for construction, and then move it variable distances, but also having 'smaller' tools to bevel edges and carve your name.
