So then this time I made an exotic dish with vegetables of course…what else!!
Vegetables single-side fry
Time taken for preparation 20 minutes total. Pics above are in various stages of cooking.
Ingredients: Few leaves of Mint, One Tomato cut in thin rings, 1/3 of a carrot in diagonal rings, pinch of turmeric powder, Three/four slices of karela, a quarter green capsicum cut in medium slivers, a green chilly with its tail chopped off,, 4 lady fingers okra/bhendi cut in rings, a quarter onion sliced in rings, two small chunks of mango pickle spiced/filled with red masala and asafetida…or just two slices of raw mango will do as well…a tea-spoon of garam masala, half-tea spoon table salt, one table spoonful edible cooking oil, an oval or flat thick pan.
Cut the vegetables and keep aside.
On a slow-fire, fry the Bhendi-okra (lady finger rings) after the pan is warm…add the oil evenly and sprinkle the garam masala…ADD the salt ONLY AFTER the flame has been turned off….maybe one day I might explain why this is so important…in my recipes where salt is concerned.
Nicely stir them gently with spatula for ten minutes…do not let them burn.
Now shove the lady-finger rings to the middle of the pan in a tight crowd…add tomato rings as shown, as well as the mint-leaves, capsicum, onion, carrot, tomatoes, pickle, chilly, karela, e.t.c
Do not stir anymore….keep the flame at minimum and let the underside of the vegetables get fried/baked as we must not add any more oil…keep this on for five minutes….we just need a hint of a fry on the veggies underside…while the side-facing you remains raw. Sprinkle a pinch of turmeric powder on the karela rings.
Turn of the flame…serve the pan as is to the dining-table straight onto a wooden bracket…after the pan has cooled a bit. As using a spatula to pour the contents will ruin our garnish design. Garnish and presentation is the primary appetizers ….visually, remember.
Serve the dish with Koubous, hot bread, butter naan, roti, chapatti….try some limbu-paani as a drink to cool your tongue too.
Note to the gourmet: hold the stem and nibble into the chilly in occasional controlled micro-bites to vary your taste experience…
As you take a bit of this and a sip of that.

my girls and I went diamond mining yesterday...gotta love the energy from the stones they are amazing
then after we were invited to a BBQ and they served burdocks(spelling maybe off) I am a true southern girl that has moved to the north...they just went out into their filed yanked them out -a burdock is a weed that attaches to your clothing and makes a bit of a mess well they grabbed em deep fried em and wha-la interesting day in total dug in the earth and ate directly from the earth...have no idea why i just shared all of that with ya it felt good at the time*)

Sounds tasty...I love food imagery. I would definitely like to experience some of these new and interesting flavors. A creative concept. My only suggestion would be in formatting...it's a little more like prose than poetry, which is fine. Also I would increase the font size to make it more easily readable. Off to have something to eat now!

This is an enticing recipe!...very exotic dish, and I will have to try it... the problem is, I may not find some of the ingredients. :(

Honestly, makes me hungry although the names of some ingredients sound strange to me, I still think they're delicious. I liked mango, we have a lot of it in my country. Chapatti sounds interesting. I might do a research some other time. The photo is mouth watering:) I liked the effort you've put into this. Very creative:)

Looks good and colorful...I saw you are allergic to garlic...im allergic to mango and shellfish...Whats worse than being allergic to shrimp my favorite food. Wasnt always allergic. Alot of work you did not just on the dish but writing the recipe.
You get 100 points for that dish.
it needs pressed garlic and cilantro....sounds extraordinarily yummy
