I'm so glad to see that there are other morning folk around - these days it seems the only time my mind achieves any real clarity. Maybe as an American, you may not be familiar with what is, I think an English proverb:
Red sky at night, shepherd's delight;
Red sky at morning, sailor's warning.
Red sky at morning? Well I don't have to go out into the sailor's warning now I'm retired so I just sit back and watch the light show.
I find your description of the change period delightful:
In a moment's time - breakfast ends,
colors become one light.
Once hidden things are soon revealed,
exposed in daytime's dight.
And thanks for teaching me a new word. I had never come across dight before.
A simple, understandable and quite delightful poem which I have thoroughly enjoyed reading.

I'm actually eating dinner now so I just had to read a poem called Breakfast lol I see the star many a morning these days, but it is usually because I am still awake from the day before lol On those evenings when sleep does find me, there is nothing better than to head out onto my porch in the still dark and await the sunrise. If i am lucky, I get to share such an event with the buck that likes to feed in my field. This had that perfect flow which makes it simply roll off the tongue when read aloud. Nicely done. :)

In the third stanza, last line I think you mean to use the word 'light' instead of 'dight'. In any case, a beautiful undertaking which truly captures the essence of the morning rising.
