Day starts.
Get to move a little slow. Set up the place. Moment to talk. Service draws near. Tensions start to surface. Pace picks up. It's time. If you haven't done it, it becomes hard to understand. Knives, flame, scalding water, hot oil. All join together. Twisting, dodging, anticipating your coworker's move. When it's right, you might as well be dancing.
