The Rush

"

This is why I still cook.

"
Day starts.
Get to move a little slow.
Set up the place.
Moment to talk.

Service draws near.
Tensions start to surface.
Pace picks up.

It's time.

If you haven't done it, it becomes hard to understand.

Knives, flame, scalding water, hot oil.
All join together.
Twisting, dodging, anticipating your coworker's move.

When it's right, you might as well be dancing.
When it goes wrong....

Jon Roggie,
You are brave to do your own cooking. It can be tricky at times and it does pay to take it slow and plan. The process of preparing and the stages are seen in above writing. I found myself imaging the experience. The last line definitely leant good contrast.
