I like my meat a little pink in the middle

among the gray

not all pink, that’s too much, and

I don’t want the damn thing still mooing

but a little pink is perfect

I want it to compliment my palate,

not overwhelm it

something I can pair with a good red wine

that meat should be aged a little

that meat should be marbled

I want a little crust and crunch

I want to know when I finally bite down

my mouth will be filled

with juice
