![]() Buttermilk biscuits and sausage gravyA Chapter by Silent Wolf![]() Cooked this yesterday, got the recipe today. yields 10 biscuits and 12 servings of gravy.![]() BISCUITS Ingredients 2 cups unbleached, all purpose flour, plus more for dusting the board 1/4 teaspoon baking soda 1 tablespoon baking powder (Without aluminum) 1 teaspoon salt 6 tablespoons butter, very cold 1 cup buttermilk Directions: 1: Preheat oven to 450. 2: combine dry ingredients in a bowl, or in food processor. 3: cut butter into chunks. 4: cut flour until resembles cornmeal. 5: add buttermilk and mix JUST until combined. Should be wet. If appears dry, add more buttermilk. 6: turn dough out onto floured board. 7: knead dough. 8: use a round cutter to cut into rounds. 9: Place on cookie sheet and cook for 10-12 minutes. GRAVY Ingredients 1 lb breakfast sausage 1/3 cup all purpose flour 3 cups whole milk 1/2 teaspoon seasoned salt 2 teaspoons freshly ground pepper biscuits, warmed, for serving Directions: 1: tear small pieces of sausage and add in a single layer to large skillet. 2: brown sausage over medium-high heat until no longer pink. Reduce heat to medium low. 3: sprinkle on half the flour and stir until sausage soaks it up, then add more little by little. 4: stir around and cook for another minute or so, then add milk and constantly stir. 5: cook and stir until thickens. Sprinkle in seasoned salt and pepper. 6: stir until very thick. If cooks too fast, add in another 1/2 cup of milk. Taste and adjust seasoning. 7: spoon sausage over biscuits and serve immediately.
