All things soft have turned rough

Those sweet words are now so sickly

A poem can be deep. It can be so deep and symbolic that it sounds amazing, but in the end, it might not mean anything that hasn't already been said. I used to write this way all the time. You might want to try writing about something that is more well known, and hasn't already been done. Try something such as politics, individuality, ambition, dreams; things that literary novels and movies tend to explore. Add your own ideas to these subjects. Then write a poem about it.
