  • One shallot, finely chopped

  • One clove of garlic, finely chopped

  • Dose of olive oil

  • One- fourth green pepper, finely chopped

  • One- fourth red pepper, finely chopped

  • 60g tomatoes

  • 6 large eggs

  • Half tablespoon paprika

Preparation Method:

  • Preheat your oven to 200 Celsius/390 Fahrenheit.

  • Place a frying pan on medium flame and pour oil (preferably olive oil).

  • When the oil heats up, add some shallots and leave it on the same flame for 3 minutes.

  • Add garlic, tomatoes, peppers, and paprika then and leave it for another 5 minutes; stir occasionally to ensure they don’t stick to the bottom of the pan. You may turn off the flame then and leave it to cool down at room temperature.

  • In a bowl, beat 6 eggs. Add the contents of a frying pan and then season it with pepper and salt.

  • You may add other seasonings as well as per your taste.

  • Fill the ingredients in equal portions on to the tray and place it in the oven for 15 minutes, until the muffins are fluffy and bouncy. And, there you go, enjoy a fantastic, easy meal like never before!
