Unsung Hero

Experimenting with poetic form, square, crusts off

"

Let’s for one moment consider toast

Proper butter, salted, thick layer

Lightly browned, no burnt edges

Just warm, not hot

Sitting on a side plate

Waiting its turn

Or is it buried under a mound of beans?

Is it a starter, a main or even dessert?

Or will it mop up behind you?

Cleaning the plate, removing the streaks

Of egg yolk, bean juice, sausage fat

Will you eat all or leave all the crusts?

Abandoned on your plate, small triangles

What every your proclivity, use it, abuse it

The unsung hero of the breakfast is toast
