Sue’s Homemade Chicken Soup
Created by Sue C. Cooking time- 45 min Serves 4 people *optional extra veggies (recommended) Many pots/bowls/cooking utensils needed Ingredients; -Olive oil or butter ~used to saute onions in~ (1 tbsp) -Yellow onions (3 onions) -Boneless chicken thighs (1 ½ lbs) or whole thighs (4 thighs) -Garlic (½ garlic bulb) -Ginger (palm size) -Sweet potatoe (2 large potatoes) -Chicken broth (Enough to cover sweet potatoes, box) -Red curry paste ~Thai Kitchen~ (heaping spoonful) -Broccoli (2 ½ cups or 2 small stocks) *carrots (2 small or 1 large) *celery root (1 cup, small whole) ~strong celery taste~ Directions; 1)Chop up onions in large chunks (cut in 8ths) saute in olive oil at bottom of stew pot 2)Add whole thighs if using whole thighs, put on low-medium heat 3)Peel garlic, add to pot in whole chunks (warning: do NOT burn garlic) 4)Add peeled and sliced ginger to pot 5)For boneless chicken, cut against grain in strips and add to pot 6)Let sit for about 15 min until chicken is cooked. Chop up sweet potato and add to pot 7)Add chicken broth, until level with sweet potatoes 8)Add curry paste along with liquid and stir in 9)Throw in any other veggies being used 10)Add broccoli, and cook for 5 min 11)Add red bell pepper, let cook 2 min (until pepper is warm) 12)Take out bowls & serve! *eat with Rosemary Olive Oil bread, dipped in brothy stew *eat with Lindor Truffle dark chocolate (temp change) *Nibble on raw veggies and cheese on crackers with apple cider juice while food is cooking. Also, cream cheese and sliced pears is rather nice as well. Another option would be sliced jicama (Mexican) sliced into square strips, or kunquats (orange) *Good for a cold winter night © 2011 Cecile |
