The Analyzing of Shakespeare's Romeo and Juliet.
Parting is such sweet Sorrow
This is Shakespeare's way of saying Juliet will miss Romeo.  He says it in a way that captures the entire scene in one line.  The same way an exclamation mark punctuates the end of a sentence.  This line adds punctuation to the end of the scene.  There a long standing relationship between things in life and in literature being bitter sweet.  Drugs for instance serve as a perfect example.  To the taste, some drugs can be bitter but in the end the resulting sensation is one that we can define as sweet.  Shakespeare here uses the words sweet sorrow to serve as an example as to how Romeo leaving Juliet's presence is sorrowful but the act of saying goodby (there embracing and kissing) is sweet.  Again, Shakespeare catches the entire scene in one sentence.
Juliet speaks this line to herself and to the audience as a sort of narrative soliloquy.  She is in a reflective state but the lines she speaks often comes across as poetry.  Shakespeare rhymes quite often in Romeo and Juliet.  In this instance (parting is such sweet sorrow) he does not but you can feel the melodic nature to the line when it is delivered.
In the movie directed by Baz Luhrmann we find a cinematic reference and celebrate Luhrmann's vision of Romeo and Juliet. Claire Danes delivers the line "parting is such sweet sorrow" with a childish smirk that also captures the essence of a woman beauty.   Luhrmann's vision is one reason why I took this analysis on.  I hope you enjoy it.
