SOUL DOG GLUTEN-FREE CHOCOLATE CHIP COOKIES

These are some of the best chocolate chop cookies we've ever had.  No one will know (or care) they're gluten-free.

1 c. canola oil

3/4 c. sugar

3/4 c. brown sugar

2 eggs

1 tsp. vanilla

2-1/3 c. Gluten-Free Baking Mix

1 tsp. baking soda

1 tsp. salt

2 c. chocolate chips

1.  Preheat oven to 350 deg. F.  Grease a baking sheet.

2.  Combine oil & sugar in a lg. bowl, & beat w/ a mixer on med.-high speed.  Add eggs, one @ a time; mixing til creamy.  Add vanilla.

3.  Reduce speed to low & gradually add baking mix, baking soda & salt.  Stir in chocolate chips.

4.  Drops by level tbsps. or sm. ice cream scoop 2" apart onto baking sheet.  Flatten slightly.

5.  Bake 10-12 min. Remove cookies from pan; cool on wire racks.  Makes about 2 doz.

Per cookie:  250 cal., 15 g. fat, 20 mg. chol., 3 g. pro., 29 g. carbs., 2 g. fiber, 250 mg. sodium.
